Polydextrose (E1200) is a synthetically produced polymer of glucose (dextrose) that is officially classified as a soluble dietary fiber. Polydextrose is a highly branched glucose oligomer that is synthesized by combining molten glucose with approximately 10% sorbitol and 1% citric acid (or fumaric acid) as a catalyst. The complex, random chemical bonds present within its molecular structure prevent mammalian digestive enzymes in the small intestine from readily breaking it down. As a result, it yields a very low energy value of roughly 1 kcal per gram (compared to 4 kcal for regular sugar) and arrives in the large intestine almost entirely intact. From a food technology perspective, polydextrose is highly soluble in water and exhibits excellent stability in both high heat and acidic environments, ensuring a long shelf life for products. However, its actual sweetness is exceptionally low—only about 5% as sweet as sucrose (table sugar)—meaning it is typically used in conjunction with high-intensity sweeteners.
